At the Department of Food Science and Technology at the University of Calabar, Nigeria, our seasoned lecturers combine high professional and academic standards to train future food experts in the design, development, and handling of food products. Our strength lies in our diversity that cuts across all spheres of the workforce and the students’ populace.

We run a rigorous five-year bachelor program that equips students with after-school skills that make them the target of high-profile employers and furnish them with entrepreneurial skills. Intending undergraduate and postgraduate students, who are ambitious, purpose-driven, and passionate about learning and initiating paradigm shifts in local and global food security are always welcome to contact the Department.

We boast of our strong capability not to only help you achieve your dreams but to also place you in good stead to compete with your peers all over the world. We are committed and endeavor to produce qualified graduates who contribute towards ensuring that the university community and the larger public can access nutritious and safe food while achieving optimal utilization through Food Science and Technology.

We have a mission to pursue, excel and maintain a world-class leadership role in the quest for knowledge by way of research, capacity building, consultancy, and innovative outreach to contribute to food productivity, food safety, and food security through sustainable value addition and natural resources management.

Our current research expertise includes food processing, food chemistry, food microbiology, food engineering, food product development, food safety, food nutrition, among others.

Mission

 

To expand and transfer knowledge for continuous improvement of the safety, quality, value and security of the world’s food supply through basic research and outreach programmes.


Vision

 

To produce high caliber Food Science and Technology Graduates who will be well equipped through the training they receive so as to support the rapid changes in food industries.


Philosophy

 

The Food Science and Technology program is geared towards developing a highly knowledgeable, skilled and inspired professionals that would provide innovative solutions to the challenges of the rapid changes in food industry from production to processing that meets consumer demands.


Objective

 

Our goals include developing:

-    Effective integrated education in Food Science and Technology from farm to table continuum

-    Appropriate knowledge and technologies relevant to food processing and utilization

-    Strong linkages with private industries and organizations for the commercialization of appropriate technologies generated.

-    Public awareness and advocacy on relevant issues affecting food quality and safety

-    Dynamic cooperation with various units in the institution and with external organizations concerned with Food Science and Technology

History

The Department originated from a request made by the Dean of Faculty of Basic Medical Science to establish the Human Nutrition and Dietetics program which Food Science and Technology was approved by the University Senate in 2013.  When the approval got to the National University Commission (NUC), the NUC directed that the Food Science and Technology should be established as a unit in the Department of Animal Science in the Faculty of Agriculture, Forestry, and Wildlife Resources Management. A formal request was then made by the Head of the Department of Animal Science - Dr. (Mrs.) Kennedy was aided by Dr. Christopher Adams Eneji, who was a specialist in the area. The big dream to established a department was fulfilled in 2014 when a formal request for resource verification was given by NUC. The collaborative effort of Associate professor C.A. Eneji and Prof. Christine Ikpeme quickened the birth of the new Department. In the 2014/2015 academic session, the first set of students were admitted to the Department with the appointment of Professor Christine Amaka Emmanuel Ikpeme as pioneer Head of Department and with an initial intake of twenty (20) students.
